June 2024: Exciting breakthrough in my pie-baking technique, applying John Kenall's Preppy Kitchen youtube cherry pie filling prep method not only to cherry pie, but also to my blueberry pie, pictured here, for a perfect marriage of the ingredients of the filling into a uniform whole that maintains its flavorful shape perfectly when sliced. The method is to simmer the watery fruit (blueberries, cherries, or whatever) x 10 minutes in a pan, then add sugar-water-corn starch-lemon juice, butter, which draws out more water, then continue simmering for 5 minutes until it thickens up into a beautiful, uniform, flavorful filling.
In 2018, my pies are finally turning out the way I want, with a richly flavored golden crust, and filling that holds its shape even after the pie wedge is sliced... pretty simple with apple pie, but not so easy with blueberries, that can so easily be runny. Come on over, dinner's at 6!
